Make it — as easy as 2-minute noodles
You'll need: 1 pack of Mexican · 150g mixed vegetables, finely chopped (50g bell peppers, 40g onions, 30g corn, 30g tomatoes) | 100g baked beans, drained | 30g crushed Doritos (any flavor you like) | 60g grated cheese (cheddar or Mexican blend) | 15g or 2 spoons oil or butter | 2 large flour tortillas (about 50g each) | 20g or 2 spoons fresh cilantro/coriander, chopped | 30g salsa or sour cream.
- Heat oil in a skillet over medium heat. Add the mixed vegetables and sauté for 2-3 minutes until tender but still slightly crisp.
- Add the baked beans and sprinkle in the 12g of Mexican Magic Mixx. Toss everything well to coat evenly, then remove from heat. Add the crushed Doritos and mix to combine.
- Place one tortilla on a clean surface. Sprinkle 30g of cheese, then spread half of the veggie-bean-Dorito mixture evenly on top. Add another 30g of cheese on top, then place the second tortilla to close the quesadilla
- Heat a little oil or butter in a large skillet over medium heat. Carefully transfer the assembled quesadilla to the skillet and cook for 2-3 minutes on each side until golden brown and the cheese is melted.
- Repeat for the other quesadillas and slice into wedges and garnish with fresh cilantro if desired. Serve hot with salsa or sour cream on the side.
