“Gracefully tuck your Aloo Baingan sabzi into a warm roti, serve it with a chilled yogurt dip, and call it ‘Smoked Aubergine & Spiced Potato Wrap’—because giving it a fancy name makes it taste much better.” 😋
Step 1: Wash the karelas thoroughly. Cut a slit lengthwise in each karela, being careful not to cut through completely. Remove the seeds to reduce bitterness and create space for the filling.
Step 2: In a bowl, combine the tomato puree with 20g of Bharma Magic Mixx. Mix well to evenly coat the puree with spices.
Step 3: Fill each karela with the tomato-Bharma Magic Mixx mixture, pressing gently to secure the filling inside.
Step 4: Heat oil in a skillet over medium heat. Place the stuffed karelas in the skillet and shallow-fry for 2-3 minutes on each side, until they start to turn light brown.
Step 5: Lower the heat, cover the skillet with a lid, and steam-cook for 10-12 minutes, turning occasionally, until the karelas are tender and fully cooked.
Step 6: Garnish with fresh coriander if desired, and serve warm.
