🍴 Recipe
- Prepare the Enchilada Sauce
- Heat 1/2 tablespoon oil in a pan over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened.
- Add the chopped tomatoes and 6g of Mexican Magic Mixx. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and break down.
- Use an immersion blender (or let it cool slightly and blend in a blender) to puree the sauce until smooth.
- Add vegetable broth or water as needed for a pourable sauce consistency. Season with salt to taste, then simmer for another 2-3 minutes. Set aside.
- Prepare the Filling
- In a skillet, heat a little oil over medium heat. Add the mixed vegetables and sauté for 2-3 minutes until just tender.
- Add the baked beans and sprinkle in the remaining 6g of Mexican Magic Mixx.
- Stir to coat everything evenly, then remove from heat. Mix in the crushed Doritos and 15g of grated cheese. Set aside.
- Assemble the Enchiladas
- Preheat your oven to 180°C (350°F)
- Spread a thin layer of the enchilada sauce on the bottom of a small baking dish. Place the filling on each tortilla, roll them up, and place seam-side down in the baking dish.
- Pour the remaining sauce over the enchiladas in the baking dish and sprinkle with the remaining 15g of cheese.
- Bake for 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro, and serve hot with a side of sour cream or salsa if desired.
