🍴 Recipe
  1. Prepare the Enchilada Sauce
  2. Heat 1/2 tablespoon oil in a pan over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened.
  3. Add the chopped tomatoes and 6g of Mexican Magic Mixx. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and break down.
  4. Use an immersion blender (or let it cool slightly and blend in a blender) to puree the sauce until smooth.
  5. Add vegetable broth or water as needed for a pourable sauce consistency. Season with salt to taste, then simmer for another 2-3 minutes. Set aside.
  6. Prepare the Filling
  7. In a skillet, heat a little oil over medium heat. Add the mixed vegetables and sauté for 2-3 minutes until just tender.
  8. Add the baked beans and sprinkle in the remaining 6g of Mexican Magic Mixx.
  9. Stir to coat everything evenly, then remove from heat. Mix in the crushed Doritos and 15g of grated cheese. Set aside.
  10. Assemble the Enchiladas
  11. Preheat your oven to 180°C (350°F)
  12. Spread a thin layer of the enchilada sauce on the bottom of a small baking dish. Place the filling on each tortilla, roll them up, and place seam-side down in the baking dish.
  13. Pour the remaining sauce over the enchiladas in the baking dish and sprinkle with the remaining 15g of cheese.
  14. Bake for 10-15 minutes, or until the cheese is melted and bubbly.
  15. Garnish with fresh cilantro, and serve hot with a side of sour cream or salsa if desired.
