Recipe
❶ Wash and dice potatoes and eggplant into similar-sized cubes.
❷ Heat oil in a skillet over medium heat and cook potatoes for 5-6 minutes until golden.
❸ Add diced eggplant and cook for another 4-5 minutes.
❹ Sprinkle 1 pouch of Dry Veg Magic Mixx and toss well.
❺ Lower the heat, cover, and cook for 5-7 minutes until tender.
❻ Garnish with fresh coriander.
