Recipe
❶ Boil the rice and keep it aside.
❷ In a small bowl, toss the canned baked beans with 1/2 pouch of Mexican Magic Mixx. Set aside.
❸ Heat oil in a skillet over medium heat. Add the chopped bell peppers, corn, and cherry tomatoes.
❹ Sprinkle with the remaining 1/2 pouch of Mexican Magic Mixx, and sauté for 3-4 minutes until just tender. Remove from heat.
❺ Divide the cooked rice between two bowls. Top with the seasoned beans, sautéed veggies, shredded lettuce (if using), and grated cheese.
❻ Garnish with fresh cilantro and serve with lime wedges. Add a dollop of sour cream or guacamole on top if desired.
