Recipe
❶ Heat oil in a pan, sauté onion and garlic for 2-3 minutes.
❷ Add tomatoes and 1/2 pouch of Mexican Magic Mixx, cook for 5-7 minutes until softened.
❸ Blend into a smooth sauce, adjust consistency with broth or water, and season with salt. Simmer for 2-3 minutes and set aside.
❹ Sauté mixed vegetables in oil for 2-3 minutes until tender.
❺ Add baked beans and the remaining 1/2 pouch of Mexican Magic Mixx, stir well.
❻ Mix in crushed Doritos and 15g grated cheese, then set aside.
❼ Preheat oven to 180°C (350°F).
❽ Spread enchilada sauce in a baking dish, fill tortillas, roll, and place seam-side down.
❾ Pour remaining sauce over enchiladas, sprinkle with cheese.
❿ Bake for 10-15 minutes until cheese is melted and bubbly. Garnish with cilantro and serve hot with sour cream or salsa.
