❶ Boil the tomatoes until soft, set aside to cool.
❷ Boil all the vegetables in 300ml of water until soft and cooked.
❸ Once cooled, mash the boiled vegetables with their water and set aside.
❹ Peel the skin off the tomatoes and blend into a smooth puree.
❺ In a pan, heat ghee and cook the tomato puree for 5 minutes.
❻ Add 16g of Magic Mixx masala and the mashed boiled vegetables. Cook for 10-15 minutes, or until fully cooked.
❼ Garnish with chopped coriander.
Tip: Adjust consistency to your liking by adding hot water.
